I think the pumpkin dip/cheese ball {call it what you want} was the favorite dish at the party. And….I came up with the recipe myself! I saw these gingerbread chips at the store and knew I had to buy them and eat them with some sort of pumpkin dip. I searched the internet and couldn’t quite find something I liked. And then when I was at Trader Joes, I found some Pumpkin Butter {think apple butter} and knew I could come up with something.
Pumpkin Cheese Ball
8 oz. Cream Cheese
1 stick of butter
3-4 tablespoons Pumpkin Butter {I just kept adding it, so this is an estimate. Start with one tablespoon, then keep adding until it tastes yummy!}
1/2 tsp Vanilla
Combine cream cheese and butter in a mixing bowl. Blend until creamy. Add pumpkin butter and vanilla. Mix until combined and fluffy. Put in fridge for at least 3 hours. When ready to serve, form into a ball.
Easy, and so yummY!
Did you only put in 1/2 tsp of vanilla...I would have put half a bottle in!!! Just kidding. How were you able to tell when it was good? And can I say, you are awesome.

This sounds so good! Last year for Thanksgiving I made something similar, but wish I would have had the pumpkin butter...I think I used cottage cheese, too...it turned out nice, but this looks so much nicer!
