Caramel Cupcakes

You know I use any excuse to make cupcakes. Especially birthday’s! :)

A sweet little girl was turning 6, so I wanted to make her something extra special.

Dark fudge cupcakes, filled with homemade caramel, topped with caramel buttercream, drizzled with caramel and rolos. Yum!

Nothing makes me happier than perfectly rounded cupcakes. {No joke!}

After we delivered them to the birthday girl, we saved a few to enjoy ourselves! {Can you blame us?}

This is how WE enjoy our cupcakes!

Seafood Fest!!

This evening Benji’s friends invited us  to a “seafood fest” on the Eastern Shore. We love us from seafood! :)

As you can see from the map below, most of our drive was on a bridge. {A 17 mile bridge! There were only a few moments that I got anxiety! Holy smokes I don’t know how my boys go fishing out there in the bay completely surrounded by water!!} Speaking of my boys, it was fun to see their excitement as we came up on the “2nd island” and “4th island”. Those are places that they go fishing. The “islands” are where the bridge turns into a tunnel.

Waiting on dinner. It was raining, so the kids spent most of their time in the “Taj Mahal”{not pictured!}……a luxury motor home!

And clams:

I even tried the clams. It’s the first time eating them by themselves…..I LOVE clam chowder….

The kids have fun with the shells!

Ben’s table fare. Yum!

It didn’t surprise me that Parker liked the clams. He loves oysters….raw! Yuck!

Parleigh had to check things out!

Cookie Monster

This girl has a sweet tooth. She loves her some cookies. And candy. And treats. I try to limit her intake of sweet treats, but heaven help me, sometimes it’s just nicer to eat dinner in peace, and let her eat dessert first!

Can you say mess-y? Seriously! She  finds a way to make a complete mess every.single.time.

We celebrated Cinco De Mayo by eating chicken tacos, drinking Jarritos, and eating cookies that looked like they had refried beans and queso on it. {Or so Ben said. They were brownie cookies with marshmallow cream and fudge frosting. Not intended to have anything to do with Cinco De Mayo. They just looked yummy! And they were!}

Maybe Parleigh thought she was eating “refried beans”?

That’s how we roll!

***********************************

Instead of going “over the top” with a dessert, and knowing that Ben was working and I didn’t want to stress out about running out of time today, I went the “classic” route for the dessert auction with chocolate chip cookies. {I used milk chocolate chips.} And, instead of auctioning off a plate of oversized cookies for someone to keep for themselves, I packaged the cookies (2) to a bag and priced them at $5. So, in all, they sold for $40. Not too bad! I wish I would have doubled the recipe and sold more of them! And in case you are wondering, the dessert auction is held to raise money for our youth {boys and girls} to go camp this summer. In all, they raised $1650! {correct me if I’m wrong!} I think that’s a new record!

That’s How We Roll: Day 4

My fridge is personal. It’s hard for me to allow others to open my fridge, let along put things in there! Don’t ask me why. That’s just how I roll! When I have company over, and I need to put something away, I open the door halfway, put the food in, and hurry and shut it. Maybe I feel that you can tell a lot about a person by the contents of their fridge.
Well, today is your lucky day. I will allow you to peep into my fridge. Mind you, it’s nothing exciting. At all. Not even a little bit. And I’m somewhat getting anxious just thinking about posting pictures. I mean, what’s the big deal, right? It’s just a fridge. And you probably don’t care. But for me, looking in someone’s fridge is like finding out a whole different side of that person.
Aren’t we all obsessed with HGTV and all the home shows? Don’t we all love looking at other people’s houses? {Or is that just me?} Without further ado. My fridge.

How else would you find out that we don’t drink cow’s milk {yuck!} or that we have a drawer entirely devoted to apples {that we refill once a week!} or that we {and when I say we I mean Ben} bought the big jar of pickles from Sam’s Club that will last us until the Millennium {the jar takes up half of the shelf! Who eats that many hamburger pickles?} or that we have 72 eggs in our fridge {and not because we are going to dye them for Easter, we really eat that many eggs!}
Like I said before, this gives me anxiety, putting my fridge contents out there for all the world {or like the 10.5 people who read my blog} to see. But what better way to find out “how we roll?”
